Forest honeydew honey is not obtained from flower nectar, but is produced by bees collecting honeydew drops from the living parts of all forest plants, mainly brambles and oaks. Honeydew consists of sugary secretions produced from the sap of plants attacked by some insects that sting the leaves (in particular the 'butterfly' Metcalfa pruinosa Say, originally from America, spread to Europe starting from Italy in 1980). The forest blooms between July and September.

CONSISTENCY: tends to remain liquid for a long time and crystallizes in an irregular way, generally very viscous.
COLOR: dark, almost black with amber reflections when liquid, brown when crystallized.
TASTE: strong with vegetal notes and caramelized fruit, it has a not excessive sweetness and a hint of saltiness and acidity.
PERFUME: intense, balsamic and resinous.
