Sulla ( Hedysarium coronarium , of the legume family) is cultivated as a forage crop in Central and especially Southern Italy, but it also grows, in the wild or spontaneously, on uncultivated land. It prefers clayey soils, but also adapts to poor soils. The flowering period of the forest is between May and June.
CONSISTENCY: crystallizes spontaneously, forming a compact mass of medium or fine crystals.
COLOR: It appears colorless to straw yellow when liquid; white to light beige when crystallized.
TASTE: low intensity, medium sweet, vegetal, of green legumes such as green beans, of hay, of fresh nuts with a fruity component, of dates.
PERFUME: slightly floral with vegetal notes, generic honey, straw, dry grass.
